Memory and cognition
The only study cited here is a randomised, placebo-controlled trial of sunflower phosphatidylserine in children aged 8 to 12, and it was null: the authors report no differences in primary or secondary outcomes in the total group. One pre-defined subgroup, the children who started with below-median scores, did better on a single visuospatial memory task, which is a lead for further research rather than a result you can count on. That trial also used Sharp-PS Green, a different company's ingredient, not SerinAid.
Stress and cortisol (not measured in the cited study)
No study cited on this page measured stress, anxiety or cortisol. The single cited trial used cognitive tasks only, so nothing here supports a claim about SerinAid and the stress response.
Brain cell membranes
Phosphatidylserine really is a structural part of nerve cell membranes, which is why researchers have looked at it for brain function. That is background biology, not evidence that taking SerinAid improves learning or memory.

Proposed effect on the stress (HPA) axis
Some researchers have proposed that phosphatidylserine may blunt the body's stress hormone response, but this remains an idea rather than something demonstrated here. No study cited on this page measured cortisol or stress.
Clinical trials

A subgroup result from a trial that missed its own endpoints is a hypothesis, not proof. Stress and cortisol were not measured.
